L-Ascorbic acid is an all important nutrient and antioxidant. L-ascorbic acid is frequently used as a processing aid or as a preservative in certain nutrients or food components. It is also utilized in the synthetic polymer industry, in photo processing and in metal technology. Miscellaneous uses have been proposed in cosmetics, fibers, preservation of blood, preservation of cut plants, cleaning agents and in assay reagents.

Soluble in water. Insoluble in ether, chloroform, benzene, petroleum ether, oils, fats and fat solvents. L-ascorbic acid means that the compound′s stereochemistry is related to that of the levorotatory enantiomer of glyceraldehyde.
